Ammonium bicarbonate or (NH4)HCO3 is a well known leavening agent which generates carbon dioxide upon heating.Unlike other leavening agents, ammonium bicarbonate leaves no residue in the product after decomposed. Due to it’s ammoniacal flavor, usually this additive is use in low-moisture products such as crackers and cookies. Combining Ammonium bicarbonate with other leavening agents such as sodium bicarbonate and SAPP is common practice.
